He was the first fullback taken in the 2001 Draft, selected by the Seattle Seahawks in the third round, the 82nd overall pick. In addition to the Seahawks and Saints, Heath played for the New England Patriots and Miami Dolphins.

In the offseason he also travels the country delivering motivational speeches. He once told a group, "The game of football has taught me many valuable life lessons that I feel I have a duty to share with others because of the platform the NFL shield has given me. I firmly believe in the willingness to open up about my mistakes, as much so if not more than my successes. I believe humility is a man's greatest strengths and all championship teams, successful businesses, or exceptional people are built with humility at their core."
